Homemade pizza

Način izrade, okusi i pečenje su izbor svakog kućnog picajola, a ovo je način na koji ja radim pizzu :)

This is the way I make homemade pizza :)


Najprije tijesto ;). Tijesto možete napraviti sami ili kupiti gotovo. Može se kupiti svježe u pekarama. Nije skupo. Oprez s tim tijestom jer raste kao ludo tako da pazite da ne napravite predebelu pizzu jer ćete dobiti kruh.

First we need dough :). You can make it by yourself or buy prepared. I don't know where you can buy it outside of Croatia, but here you can find it in bakeries. It's cheap. But be careful not to make too thick pizza becouse it will grow like crazy before baking and while baking.

Oblikovati pizza tijesto. Premazati ga maslinovim uljem, također i rub, ali lagano. To će dati fini okus 'korici'. Posoliti rub.

Form the pizza dough. Coat with olive oil and lightly on the edge of pizza form. This will give it a nice taste. Sprinkle with salt on the edge of pizza form.




Nauljeno tijesto premazati umakom od rajčice (gusti sok iz tetrapaka ili smiksanim pelatima iz limenke; dodajte malo soli i origana).

Spread the tomato sauce over oily dough (thick tomato juice or something similar - I don't know what you can buy in your country :D; add a pinch of salt and oregano).




Na to raširite namirnice po želji: šunku, pršut, kobasice, sir, gljive.. Što god volite :)

Add the ingredients that you like: ham, cheese, sausages, mushrooms, olives... Whatever you like :)




I ispecite :). Smatram da je puno toga u pečenju. Nekoć sam pekla na srednje jakoj do jakoj temperaturi, na oko 200°C, a pečenje je trajalo barem 20 min. Zadnjih par godina prakticiram drugačiji način.
Zgrijem pećnicu na oko 230-240°C s vrućim zrakom što dodaje na vrućini. Pečem oko 5 minuta na toj jakosti i onda provjerim. Ako je počelo dobivati boju na jednom mjestu, okrenem pizzu tako da taj jaki izvor topline pada na ono mjesto koje je najslabije prije dobivalo. Pustim minutu-dvije pa snižavam temperaturu. Provjeravam svako malo i postepeno snižavam temperaturu dok ne dođem do 200°C. Isključim vrući zrak kad vidim da je dobila dosta boje i dalje pečem klasično. Vrijeme pećenja mi traje od 8-12 min, ovisno o veličini i debljini pizze. Trebalo mi je više pečenja da vidim kako najbolje odgovara pećnici jer sve ovisi o pećnici i njenim mogućnostima.
Pečem na visokoj temperaturi jer sam zaključila da mi tako tijesto ostane mekano i sočno.

Bake :). There is a lot in way of baking pizza, I think. I baked it on about 390 F for 20 minutes or more before I started using the new way and I practice it for several years. I bake in high temperature now. I bake i preheat oven on 440-460 F with hot air wich adds some temperature. I bake for about 5 minutes and than I check pizza. If it's colored on one side, I rotate the pizza so that that part do not overbake. And than I put back in the oven and bake for minute or two more. Than I check again and lower the temperature a bit. I keep chencking often and lower the temperature gradually till 390 F. I turn of hot air when pizza get color and than bake in regular way. Bake time is usually 8 to 12 minutes, depending of size and thickness of the pizza. You'll need to try out baking several times to see how is most convenient for your oven.

I bake on high temperature because I realized that the dough remains soft and moist.


I ovako izgleda pečeno. Nije najbolja slika. Žao mi je. Imala sam i ljepših primjeraka :)
